Need info on how to get immigration taken care of if travelling from San Pedro, Belize to Xcalak, then back to Belize and if it is harder to do in the off season.

I am not really sure in the direction you want this.

XTC diving helped us out from Xcalak -> San Pedro -> Xcalak.
So they can propbably help you to do this the other way around.
